Giant Oatmeal Drop Cookies
Makes 15 cookies Preheat 350 degrees • Ingredients 1 cup of dark brown sugar 2 tablespoons trans-fat-free margarine, softened 1/2 cup unsweetened applesauce 2 egg whites 1 1/2 cups unbleached flour 1 1/2 cups regular oats 1 teaspoon baking soda 1 teaspoon cinnamon 1/2 teaspoon salt (optional) 1/2 cup unsweetened dried cranberries 1/2 cup chopped walnuts 11/2 teaspoons vanilla extract Beat sugar and margarine at medium speed until well-blended (about 5 minutes). Add applesauce and egg whites; beat well. Lightly spoon flour into dry measuring cups; level with knife. Combine flour, oats, soda, cinnamon and salt. Add flour mixture to sugar mixture; beat at low speed until well-blended. Stir in cranberries, walnuts and vanilla. Using 3 level tablespoons per cookie, drop dough 2 inches apart onto greased baking sheets; flatten slightly. Bake at 350 degrees for 10 to 15 minutes. Remove from pan; cool on wire rack.
